The sheep industry is evolving as more sheep are raised on small farms rather than large ranches, with the overall decline in sheep numbers slowing due to new specialty markets like locally grown foods, high-quality sheep cheese, and specialty wools. At the same time, ethnic consumers are driving growing demand, especially among Eastern European, Middle Eastern, and Asian communities who frequently eat lamb, suggesting strong potential for continued industry growth.
